Jyagatama


[Ingredients]

  • 2 potatoes (cut into cubes)

  • 4tbsp cooked mixed vegetables

  • 1/3 cup mayonnaise

  • 1 lemon

  • Salt

  • Sugar

[Steps]

  1. Add the potatoes to boiling water and cook for 15mins until they are soft but not mushy. You can also microwave it in a bowl covered with a sheet of plastic wrap for 3mins.

  2. Place the potatoes in a zip-lock bag and force out as much air as possible. Mash the potatoes slightly using a wooden spoon.

  3. Mix the mashed potato, vegetables, mayo, salt, sugar and lemon juice together in a bowl. Let cool and roll the mixture into bite-sized balls. Serve.

  4. You can also roll the balls in cornstarch or breadcrumbs and deep-fry them for a different texture!
