Avocado Egg Salad


[Ingredients]

  • 2 large hard boiled eggs

  • 2 large hard boiled egg whites - discard yolks

  • 1/2 avocado - cut into 1/2" cubes

  • 1tbsp light mayonnaise

  • 1/2tsp dijon mustard

  • 1/2tsp caper brine - liquid used for preserving capers

  • 1/2tbsp fresh chives/dill - finely chopped

  • 1/4tsp salt

  • Pinch of pepper

[Steps]

  1. Combine egg yolks with avocado, mayo, mustard brine, chives/dill, salt and peper.

  2. Mash using a fork and mix well.

  3. Chop egg whites and mix in. Adjust seasoning.
