[Ingredients]
2 large hard boiled eggs
2 large hard boiled egg whites - discard yolks
1/2 avocado - cut into 1/2" cubes
1tbsp light mayonnaise
1/2tsp dijon mustard
1/2tsp caper brine - liquid used for preserving capers
1/2tbsp fresh chives/dill - finely chopped
1/4tsp salt
Pinch of pepper
[Steps]
Combine egg yolks with avocado, mayo, mustard brine, chives/dill, salt and peper.
Mash using a fork and mix well.
Chop egg whites and mix in. Adjust seasoning.
