[Ingredients]
Vegetable oil cooking spray for greasing
315g plain flour
2tsp salt
1/4tsp pepper
2 whisked large eggs
500g panko breadcrumbs
4 boneless skinless chicken breast - cut into 2.5cm strips
1tbsp honey
1tbsp brown sugar
80ml ketchup
2tbsp mustard
[Steps]
Preheat oven 230degC. Lightly greased a baking tray with cooking spray.
Get ready 3 bowls. Bowl A: flour, 1tsp salt and pepper. Bowl B: eggs. Bowl C: breadcrumbs.
Dip chicken into bowl A, shake off excess. Then into bowl B, allow excess to drip off. Finally into bowl C, shake off excess. Lay coated chicken on the greased baking tray.
Bake chicken for 30mins until crisp and golden brown.
Make dipping sauce. Whisk honey, brown sugar, ketchup, mustard and 1tsp salt together.
Serve chicken hot from oven with dipping sauce.
