Scrambled Eggs with Smoked Salmon


[Ingredients]

  • 3 eggs

  • 1.5tbsp cold butter

  • 1tbsp creme fraiche

  • Salt and pepper

  • Smoked salmon - for serving

  • Toast - for serving

  • Chopped chives/spring onion - for garnishing

[Steps]

  1. Break eggs into a pan and add in butter.

  2. Place pan over low heat and stir continuously using a rubber spatula. Keep stirring until mixture begins to set, about 4-5mins.

  3. Do not let pan get too hot, keep moving the pan off and on the heat. When egg starts to become semi-solid, add in creme fraiche, mix well, followed by chives/spring onion, mix well.

  4. Serve egg on top of toasted bread, topped with smoked salmon and chives/spring onion.
