[Ingredients]
3 eggs
1.5tbsp cold butter
1tbsp creme fraiche
Salt and pepper
Smoked salmon - for serving
Toast - for serving
Chopped chives/spring onion - for garnishing
[Steps]
Break eggs into a pan and add in butter.
Place pan over low heat and stir continuously using a rubber spatula. Keep stirring until mixture begins to set, about 4-5mins.
Do not let pan get too hot, keep moving the pan off and on the heat. When egg starts to become semi-solid, add in creme fraiche, mix well, followed by chives/spring onion, mix well.
Serve egg on top of toasted bread, topped with smoked salmon and chives/spring onion.
