Pancakes

[Ingredients]

  • 155g plain flour

  • 2tbsp sugar

  • 8g baking powder

  • 4g baking soda

  • Pinch of salt

  • 250ml milk

  • 1 egg

  • 30g unsalted butter - melted

  • 1/4tsp vanilla essence

  • Cooking oil - for greasing

  • Maple syrup - for serving

[Steps]

  1. In a large bowl, sift in flour, sugar, baking powder, baking soda and salt. Mix well.

  2. In another bowl, add in milk, egg, butter and vanilla. Mix well.

  3. Pour wet mixture into dry mixture, mix well. If batter is too liquid, add in more flour. If batter is too thick, add in more milk.

  4. Heat a large non-stick pan and lightly grease with oil.

  5. Ladle a scoop of batter and pour into the center of the pan. Flip when lots of bubbles start to appear on the surface and pancake is brown on the under-side. Cook till both sides are browned.

  6. Repeat cooking process till all batter is used up.

  7. Stack pancakes on a plate and serve with maple syrup.
