[Ingredients]
Romaine lettuce
1 canned anchovy
50g mayonnaise
Lemon juice from 1 wedge
1 egg - hardboiled, quartered
15g croutons (about 6-8 pieces)*
1 cherry tomato - quartered
10g bacon bits
2tbsp parmesan cheese - grated + extra for garnish
2tsp dijon mustard
Pepper
[Steps]
* To make croutons on your own, cut white bread into 1cm cubes (without crust). Pan fry using butter until golden and crisp on all sides.
Smash anchovy in a bowl. Add in mayonnaise, mustard, lemon juice and parmesan. Mix well, season with pepper. * Do not use too much anchovy as it is very strong in flavour and salty.
Tear leaves into smaller pieces and toss in dressing. Arrange neatly on a plate.
Top on egg, tomato, crouton and sprinkle bacon and parmesan over.
