Baked Eggs in Tomato Sauce

[Ingredients]

  • 1tsp butter

  • 1 tomato - diced

  • 50g chicken meat - cooked, diced

  • 2 eggs

  • Pinch of salt and pepper

  • Paprika - for garnishing

  • Chopped parsley - for garnishing

[Steps]

  1. Preheat oven to 180degC.

  2. Grease a baking pan with butter. Mix tomato and chicken together and add it into pan.

  3. Break eggs into pan and sprinkle with salt and pepper.

  4. Cover the ramekins with buttered greaseproof paper and bake for 10mins.

  5. Remove pan from oven and sprinkle paprika and parsley over.
